What’s better than banana bread? BLUEBERRY BANANA BREAD!

If you’ve never tried making banana bread, you’re missing out on the perfect opportunity to use up those yucky brown bananas in a kid friendly way.  My son will practically run you over to get a slice of fresh, hot, home made banana bread.  The nice thing about bananas is that they are a natural replacement for shortenings (butter, oil, etc.), so making any recipe low-fat with bananas is very easy.  Well, the other day I was going through my fridge and I noticed some blueberries that were getting a little old.  Still edible, but it was an entire container that needed to be used, and quickly.  Low and behold… there were somee of those brown bananas on my counter… genius struck… and the result was BANANA BLUEBERRY BREAD!!!  If my son though banana bread was awesome… it has nothing on banana blueberry bread!! So in the spirit of sharing, here’s the recipe!


1/2 cup applesauce

3 T milled flax seed

2 eggs

2 to 3 ripe bananas

1 tsp vanilla

2 cup flour (i use 50/50 unbleached and whole wheat)

1 tsp baking soda

1/4 tsp salt

1 container blueberries

Preheat oven to 325 degrees and grease a loaf pan.  I use silicone, which doesn’t need greased.

Beat together all wet ingredients.  Well mix in the dry ingredients.  Fold in blueberries

Bake about 50 minutes or until a toothpick inserted comes out clean.  Transfer to a baking rack to cool.  ENJOY!

This recipe is not only a big hit with the little kids, but the big ones as well.  I recently served it at a get together for a few of my adult friends, and almost everyone asked for the recipe for this and my home made spinach dip as well.  but that’s another post for another day 🙂
